2. Add the mixed berries to the bowl and gently fold them into the tofu mixture.
3. Spoon about 1/4 cup of the berry-tofu mixture into a parfait glass or a tall clear cup.
4. Top with a dollop of Greek yogurt, followed by a sprinkle of granola or crushed cookies.
5. If desired, add a layer of whipped cream or coconut whipped cream on top.
6. Repeat the layers one more time, finishing with a layer of berry-tofu mixture on top.
7. Chill in the refrigerator for at least 30 minutes before serving.
